Remember when I said that my kids devour Sesame Chickpeas? Actually, I said they eat them plain and I needed to experiment with flavors. So, well, here’s another good one for ya.
Simple Butter Beans Recipe
(Almost Cheesy Tasting with Nutritional Yeast!)
Today, I am sharing a super simple butter bean recipe that I literally whip up in less than 5 minutes. It’s the same concept as the Sesame Chickpeas, but it tastes even better. (Maybe because I prefer butter beans to chickpeas? Definitely because I make it with more sauce!)
This is perfect to make when you are sick and tired of feeding your kids macaroni & cheese. Show of hands, how many moms served over 100 boxes of macaroni & cheese this year? Actually, keep those hands down. No need to admit that touch of imperfection.
So pretty much when you don’t feel like cooking and/or defaulting to a peanut butter & jelly sandwich neither, you should make this dish. It’s the perfect recipe to fit into that lazy lunch category, but it’s super healthy.
1 can Butter Beans
1-2 tbsp Nutritional Yeast
Salt & Pepper to Taste
Water (enough to make a bit of sauce)
Rinse butter beans.
Place all the ingredients in a small sauce pan and heat them butter beans up!
Serve warm & sprinkle additional nutritional yeast on top.

My kids eat this meal up every time I make it… and I’ve made it dozens and dozens of times!
My 2.5 year old son literally just ate his bowl of butter beans right after eating the chocolate and sprinkles off the top of a donut. I thought for sure his lunch would be spoiled. Nope. Can you spot the evidence in the pictures?
How about now? LOL. Geesh. (And here is the proof of donut for those of you who complain I don’t feed my children unhealthy food.)
