Do you eat eggplant?
I am only now introducing this extremely nutritious, purple vegetable to my diet. I never liked it much before… but I blame the fact that I never ate eggplant during my childhood. It really is good!
I attended a wedding this past year and was served a vegetarian breaded eggplant dish. It was absolutely phenomenal! Ever since, eggplant has been in the back of my mind as something I needed to start exploring with in the kitchen.

I need more meal starters with whole ingredients. Don’t get me wrong, I love some mock meats, especially Tofurky varieties (Read my review), but it is better to use a whole vegetable as the main filling ingredient.

Eggplant Meal Ideas
I decided to try two boxes of the basic Eggplant Cutlets. Each box contains 1lb of eggplant. My family of four (mama, daddy, toddler, baby) used one box to create two meals. The eggplant cutlets are coated in Italian Seasoning breadcrumbs and are rich in flavor.
Breakfast: Sunny Side Eggplant
Toast and butter one piece of whole grain bread. Place 1-2 Eggplant Cutlets (lightly fried until brown) on top, followed by a sunny side up egg, and a sprinkle of nutritional yeast. Eat with a fork… or if you must, as my husband and daughter insisted, add another top of whole grain toast to form a sandwich.
Serve with a side of fruit.
Lunch: Vegan Eggplant + Roast Sandwich
Slice up your favorite vegan roast. I used a butternut squash and mushroom based “roast” by Field Roast. Lightly fry both the eggplant cutlets and sliced roast on the stovetop. Place both between two slices of toasted whole grain bread. Add your favorite leafy green and vegan feta. Make yourself two sandwiches because each of these ingredients alone are phenomenal! (Okay, so maybe I don’t enjoy munching on swiss chard by itself…)
Serve with fries.
Dinner: Vegan Eggplant & Cream Lasagna
Lasagna noodles. Tofu or butter beans pureed with fresh Italian herbs and spices. Eggplant cutlets. Layer. Top with vegan feta and bake.
Serve with garlic bread, of course! 🙂

Dominex Eggplant Cutlets can make any recipe delicious. They are seriously SO tasty! I’ll definitely be adding them to more of my meals, along with mastering my own version of homemade breaded eggplant. I was so inspired by this brand that I butchered an eggplant for its seeds yesterday!
Now I will be growing eggplant in my epic garden! (Hopefully they will grow!!!!)
