Need a quick, healthy and stomach satisfying idea for lunch? Try this dilly vegetable oven sub and serve it with butternut squash soup. My kids (ages 1 & 4) ate it all up. The only thing that took bribing was the soup. It’s squash, so go figure. 🙂
This recipe is more of an idea to get you started. I bought a dill vegetable spread, bakery fresh sub buns, a ton of vegetables and a box of pre-made organic butternut squash soup. The point of this post is to show you how super easy it is to whip up a delicious vegetarian lunch for your family.
Dilly Vegetable Oven Subs
Total prep & cook time: 15-20 minutes
I highly recommend using all the veggies I used, especially the cucumbers, leafy greens and avocado.
- Cherry Balsamic Vinegar Cucumbers (marinated for a day prior – totally not required)
- Mixed Organic Leafy Greens
- Purple Onions
- Red Bell Peppers
Dill Vegetable Dip
- Preheat oven to 375F.
- Place sub buns on oiled tray.
- Spread dill vegetable dip on one slice of bread or both slices. (Both taste great.)
- Bake for 10 minutes or until bread is toasted.
- Heat up your soup in a pan & prep veggies for sub.
- Remove from oven.
- Layer entire slice of bread with as many cucumbers as possible!
- Then add all your other favorite veggies and place the top piece on to form your sub.
- Serve with heated soup.
I’ve also used whole grain wraps in place of white bread for an even healthier version. Both are surprisingly packed with flavor.
You don’t have to marinate your cucumbers. Marinated and non-marinated cucumbers work equally great in veggie subs. If you’re into tasting a variety of vinegars, start experimenting and tell me your favorites! 😉 I used up my cherry balsamic vinegar for these subs so I’m in the market for more! Oh– and that is why you see little chunks. I was at the bottom of the bottle and didn’t shake it up. Still delicious.
That’s the butternut squash soup we used. It is made by Campbell’s and happened to be on sale and new to our grocery store. (That was NOT a sponsored shout out unfortunately!) I’d say this soup will encourage me to try it again despite hating all squash… Maybe this is the year I will start eating squash more often… My hubby would hate me forever if he had to even watch us eat that at dinner time though. We’ve never been fans but I was in the mood to try something new while he was at work. Hey though, I went back and bought another one! 🙂
